If you’d dismissed lemon as merely a fragrance for household cleaning products, you’re missing a trick. From ancient times, lemons have been universally loved as symbols of sunshine and salubriousness. Whether beckoning us in tarte au citron, old fashioned lemonade, or a curl of rind adorning a vodka martini, lemon as a raw material is simultaneously assertive and versatile. It can also be surprisingly subtle!
Lemon’s legacy goes way back. An Egyptian mural circa 15th century BC shows a woman at a festival holding a lemon, and Hindu deities are sometimes depicted with lemons, representing wealth or abundance. The classic lemon (Citrus limon) is a perfume all by itself, in a sensual container designed by Mother Nature that suggests a breast with a nipple. A deeper dive into the xanthous pools of lemon leads you to the Big Daddy of all citrus fruits, the bumpy-lumpy citron (Citrus medica). Also known as cedrat, this OG of the citrus scene is the fruit from which all lemons, limes and sour oranges evolved. Citron is deeper and sweeter than the classic sharp lemon smell.
